Veggie Sausage Recipe

These are the sausages that we made for the Evivo Awards and won us the fabulous title of ‘UK's Best Breakfast’. Use the recipe as a base and switch up the flavours to suit. Any type of squash works here so they are great for using up allotment gluts. We use a gluten free bread but any good quality crumb will work. Whizz up any leftover bread in a nutribullet / magimix and store in the freezer for a ready supply.

Ingredients

1 Medium squash 

1 Onion

3 Cloves garlic

150g Gluten free breadcrumbs

250g Sunflower seeds

4 tbsp Buckwheat Flour

1 tbsp Fennel Seeds

1 large sprig Rosemary (or 1 tbsp dried)

150g Feta Cheese

Method

Chop the squash in half and remove the seeds. Then cut into smaller pieces approx.. 1 inch square. I often leave the skins on as they soften when roasted (and I hate peeling squash!). Toss the pieces in olive oil and salt and roast in the oven until soft and beginning to colour.

While the squash is roasting, finely chop the onion and garlic and sweat in olive oil until soft (approx. 20 mins)

Remove the leaves from the Rosemary Sprig and finely chop. Grind the Fennel seeds in a pestle and mortar with a tablespoon of sea salt.

In a Magimix or Nutribullet, chop the Sunflower seeds until it roughly resembles ground almonds – a few larger pieces are nice for texture.

Once the squash is roasted, tip it with its juices into a large bowl and leave until it’s cool enough to handle. Add the remaining ingredients, crumbling the feta, season with pepper and squidge with your hands until well mixed.

To test for seasoning, fry a small piece of the mixture

To Store and Serve

Use an ice cream scoop to portion your mix. A large scoop makes the perfect sausage size for us but you may prefer to make minis etc.

Then the messy part - use your hands to shape the mix into sausages. If you plan to freeze your sausages, lay them on a tray and place in the freezer. Once frozen, transfer to a freezer bag or container.

Otherwise, place the sausages in the fridge to firm up.

To serve, shallow fry in hot oil to create a delicious, caramelised crust (defrost frozen sausages for 1 minute in the microwave first)
